I have been told once or twice before, that I eat like a kid; I am assuming it has something to do with either the fact that I hurry through my meal just to get to dessert or that I could eat PB&J and mac 'n cheese every day.  So, I guess they were right; however, I am a bit of a mac 'n cheese snob and either like it exactly as the box instructs you to make it (bonus points for Spongebob shaped noodles), or I like it uber gourmet with fancy cheese and all kinds of extras thrown in.  We decided to be daring the other night and tried out this recipe that seemed only semi-gourmet, so I was a little skeptical about how I would like it; but I was sold with the first bite.  It is so cheesy and rich and creamy and full of flavor - it is definitely not your boxed mac 'n cheese and tastes way more complex than it looks; it certainly hit the mac 'n cheese spot and met my strict requirements.  What can I say?  I love me some mac 'n cheese.

* Notes to recipe:  I used pepper jack cheese instead of monterey jack cheese since that was what I had on hand and it added some extra spice and flavor!  I added pepper and just a tiny bit of garlic to the mix.  I also sauteed some bread crumbs to put on the top, just to give it a little crisp.

  3. Yum! Sautéing the bread crumbs makes a huge difference I’ve found. I’ll have to check this out cause I love mac&cheese too!!

  14. OMG, haha I'm just like this. I've dated guys that get mad because I just wanna order a grilled cheese or Mac and Cheese at restaurants. This dish looks so delicious and I love that you added bread crumbs. And even if Mac n Cheese is simple, at least you made it gourmet.   21. My first thoughts were Audrey's (below) "um, YUM!!" Cheesy noodles always catch my eye especially with a crispy topping! I saw Emeril Live a while back, he truly is a great chef and now's how to get everybody in on the excitement of cooking. Thanks for sharing this!
